By using Washington State’s finest Cascade hops, known for their mellow bittering character, at the start of the boil, the solid contribution of bitterness builds gradually, like a conductor skilfully bringing in the cellos in a Weber overture, thus allowing that complexity to be revealed. This beer is fermented slowly and held to gently condition at 2 degrees C for at least 6 weeks. This leads to a greater sense of harmony and balance. The overall impression is of a muscular full bodied pilsner maintaining an elegance and composure. Finish is bitter sweetwith a tantalising linger inviting another sip.
